I have a MiSTer dedicated to running on a JVC CRT with natural scanlines and all that jazz.

I turn sync on composite on, set the resolution to either PAL or NTSC SD, at 60Hz and also feed the analog audio to the SCART input on the CRT with a special cable that has a near little resistor that keeps the TV from being overdriven.

The PlayStation Unstable core is a must to try of course. First game I tried was Gran Turismo 2 (USA1.1). I remember going to The Hague to pick up the game I ordered as an import and if I remember correctly Custardo - Erwin was with me too.
