While I have completed the main Isle of Armor story, this video shows off a sidequest that you can do, and that is searching for all 151 Alolan Diglett on the Isle of Armor. When you have found enough Alolan Diglett, you do get some good rewards from the Hiker, and there is a sign that tells you how many Alolan Diglett you have found.

As for the rest of the description, I recommend watching the full video before reading past this point of the description

It is that quest where we have to find all 151 Alolan Diglett, this reminds me of the Zygarde Cells and Cores in Pokémon Sun & Moon where some were only available in certain times of day, and you had to go all around Alola to find every Zygarde Cell you could find.
This also reminds me of the Totem Stickers in Ultra Sun & Ultra Moon where if you collected enough stickers, you could get a Totem Pokémon of your own. In this case, the sign does tell you how many Alolan Diglett are still in different parts of the Isle of Armor, so if you are missing some, it does help you a bit.
I also show off Workout Sea, on one island, you can find a random Rotom appliance depending on the weather, and a girl there will give you a Galarica Cuff if you can gather 8 Galarica Twigs, this item can be used to evolve Galarian Slowpoke into Galarian Slowbro. On another island, there is another person who can reset all EVs, or Effort Values, so this can be good if you messed up with EV Training. There is another island known as Ditto Island, it is not the official name, but you can find Ditto on the island, and you can pick up a Destiny Knot, so I guess it was made for players to get started with breeding. There is also a Level 80 Wailord as an overworld encounter, this is the highest level Pokémon in Sword & Shield, but it's not the highest level wild Pokémon we have ever had, because in Pokémon Platinum, there was a chance that you can encounter a Level 100 Magikarp in one area. On yet another island in Workout Sea, you can pick up a Dubious Disc, which can be used to evolve Porygon2 into Porygon-Z when traded, and I will show you how to get Porygon in the next part.
If you talk to the Alolan Diglett's Trainer, you will get some Pokémon from him, they are also from the Alola Region like his Diglett, so there is one way to obtain Alola Forms from that guy.
5 Diglett Found: Alolan Meowth
10 Diglett Found: Kantonian Slowpoke
20 Diglett Found: Alolan Vulpix
30 Diglett Found: Alolan Sandshrew
40 Diglett Found: Alolan Raichu
50 Diglett Found: Alolan Marowak
75 Diglett Found: Alolan Exeggutor
100 Diglett Found: Rowlet, Litten, or Popplio (Depending on your starter)
151 Diglett Found: Alolan Diglett

From what I have read, the Alola Starter depends on which Galar Starter you have chosen, if you picked Grookey, he will give you Rowlet, if you started with Scorbunny, he gives you Litten, and if you chose Sobble, he will give you Popplio. All of them have their Hidden Abilities, with the exception of Raichu, where it has Surge Surfer.
This is how you can obtain a Kantonian Slowpoke, it will be holding a King's Rock, so that way you can get Slowking, and if you are wondering, you cannot get Galarian Slowking as of yet, because that will be included in The Crown Tundra.
I will go over the Hidden Abilities of the Alolan Pokémon, as well as Slowpoke.
Alolan Meowth: Rattled
Slowpoke: Regenerator
Alolan Vulpix: Snow Warning
Alolan Sandshrew: Slush Rush
Alolan Marowak: Rock Head
Alolan Exeggutor: Harvest
Rowlet: Long Reach
Litten: Intimidate
Popplio: Liquid Voice
Alolan Diglett: Sand Force

Those are some good rewards you can get, and some of the Hidden Abilities are really good, Vulpix, Sandshrew, and Litten are the ones that stand out the most, and Regenerator on Slowpoke is really good, and that is also Galarian Slowpoke's Hidden Ability. This is also the only way you can have Alola Forms of Marowak, Raichu, and Exeggutor obtained in this game without transferring from the Gen 7 games and the Let's Go games.
