Now that everything is done in the after-game, and I have showed every daily rematch in the game, this will show off the Champion Cup Rematches, you can battle every Gym Leader, as well as rivals like Hop, Marnie, Bede, and even Leon. There are a lot of opponents to fight in this huge tournament.

As for the rest of the description, I recommend watching the full video before reading past this point of the description

You can choose to invite any Gym Leader or Rival and you go up against seven random participants out of the Gym Leaders, or random Gym Challengers, which have lower level Pokémon. You cannot battle Opal in the Champion Cup, this is likely because Bede is now the Fairy-type Gym Leader, and Opal has retired, and even though Marnie is now the Spikemuth Gym Leader, you can still battle Piers in the Champion Cup.
I will not be going over the moves these Pokémon can use, because it will take description space, and there are a lot of opponents to go over, now onto each Gym Leader and Rival you can invite.

This video took me 2 hours to try and get every since Gym Leader and Rival that you can fight, and I did take on some Gym Challengers as well, and I did cut out some battles, as I do not want to show the same Gym Leader battle more than once, so if I end up battling Bea for the second time, I will not show her battle again, this might seem like an hour long video to you, but the whole video took 2 hours.
After completing a tournament, the Ball Guy will award you with a Wishing Peace the first time you take part on that day, and he will have different rewards, like different types of Poké Balls, and on rare cases, he will give you the special Poké Balls, like Lure Ball, Moon Ball, Friend Ball, and many others, and very rarely, he will give you a Toxic Orb or a Flame Orb, this is the only way to get a Toxic Orb or Flame Orb, don't know why the Battle Tower doesn't sell those items.
