The process begins with fresh sugar cane, thoroughly scrubbed to remove any impurities—cleaner cane yields purer juice. Once spotless, the cane is fed into a machine to start the extraction. The juice is filtered several times, allowing only the purest liquid to continue on. This filtered juice is then poured into a large iron vat, where it’s heated until impurities rise to the surface. Carefully skimmed off, these leave behind the concentrated sweetness. Gradually, the greenish juice thickens and darkens, marking the core of brown sugar production. When the syrup reaches the ideal consistency, it’s left to cool before being poured into molds to solidify into rich brown sugar blocks. Each block is then wrapped in a dried natural broad leaf and secured with jute string, adding a timeless, traditional finish.
