I highly recommend you buy the unlock all cars DLC.
Toyota Corolla GTS (AE86) $17,000 - D 158
Aston Martin V8 Vantage N400 $63,425 - B 1313
BMW M3 E92 $63,425 - B 1341
Nissan Skyline GT-R (R32) which is about the best handling car you can drive on all tracks easy. Cost $50,750 - B 1050 no turbo I think.
One Lambo is a B the other a WORKS full tuned A, and another is a drag engine car.
The Corvette is stock FIA GT1 you can't tune - and a favorite of mine - A 1810
The various Porchese in the game don't need tuning really. You get a Porchese Team Falken that is basically a FIA car, then another one, and can buy another, all the same really around A 1500 or 1800 and these are very easy to drive.
Gumpert Apollo is WORKS A
Mazda RX-7 (FD3S) is a great Glendale track car, $82,350 - B 1192
Mitsubishi WORKS
Pagani non works is shown, the works is much like the lambo, gumpert or F1
Nissan 200SX (S14) $45,250 - C 807
I have the unlock all cars DLC so my car values don't include car purchase price, just parts installed. A, B, C, D is car class and the number after is the car rating. Each upgrade or removal of parts changes the cars rating. Generally, 1200 - 1500 is a fast but manageable handling car much like the FIA GT3 cars. Which you can't upgrade only tune if you so wish.

You have to match some cars to some tracks, only a few can do good on all tracks easy. A lot of cars are fun, however there are a few that no matter how much you tune or upgrade they never get better. The Mercedes for instance. Also, these slow cars of mine are the best slow cars, stay away from all other slower cars for the most part. The Chevy Cobalt SS $69,950 - C 983 is good, the next up is good but the Works Cobalt is no good. I can't recall the name but the bigger sports car that is open cockpit is a great car both works and non works.

The cars in this video are sort of the best of the best, but there are still more cars that are fun to race and tune. These are my favorites though when it comes to racing and handling. Do yourself a favor and abort online rooms if a player has a Bugatti Veyron and you don't. Nothing beats a Veyron except a better lucky player racing in a Veyron. The only track I like a Veyron on is the big Dakota triangle circle track.
