When reading Psalm 22:16-18, one can see how Christians jumped to this conclusion, but to do so, they have to cherry pick part of the text as significant and ignore other parts.

They also by necessity ignore the genre of the Gospels being hagiography as opposed to simple biography and the fact that the Gospel writers were familiar with the Old Testament and believed it to be prophetic.

Constructing a story out of the Old Testament to create a narrative for Jesus' life is the most probable explanation. One cannot assume that the Gospels are necessarily historically accurate in this regard.
