We do know that later copies are very accurate because they were done in Scriptoriums by professional copyists, but early copies were less accurate. We do no know how accurately these reflect the originals because we don't have any originals.

A copy being accurate isn't sufficient to say that the original manuscript is therefore reliable. The metric of its reliability comes down to the historical method. Who was the intended audience? Is there a bias? Are there multiple independent attestations? And so on.
