I didn't know how it able to run with more 2gb v-ram but I change that setting from here:
User/Documents/Rockstar Games/Red Dead Redemption 2/Settings/System
On system.xml click edit with Notepad change it (Low,Medium, High or Ultra) it is up to you. Example: I set it High.
(textureQualitykSettingLevel_High/textureQuality)
Then save it. After that right-click on system.xml go to properties and set read-only. Apply, done!
Enjoy your game :)

Without recording I'll get more fps on this settings. :)
