Took about 40 tries to beat this salamander freak without missing on Easy mode. The trick is to go as fast as possible, because it will heal a bit when it tries to swallow you. You must beat it during it's first attempt to eat you or it will be significantly harder after. A trick that helped me in the first 6 or so shots is to aim towards the back right side. It will look like you will miss but it ends up avoiding the water. Also in the beginning, turn your boat toward the right after the first shot to get very close to it. It took 13 shots total. Patience is key here.
