Samsung has added a new feature to the One UI which lets you remap the Bixby button to any app you want on your phone, Sadly you can't remap it to launch Google assistant. This is a part of the February 2019 security update, currently, only the Note 9 has it, soon it will be released on the S9 and the S9+. So if your phone has not got the update yet, please be patient.
