Save Images as GIF and Other Formats in Preview for OS X

The image viewer and basic editing app Preview has changed slightly in recent versions of OS X (Lion onward), simplifying the Export Format options down to JPEG, OpenEXR, PDF, PNG, and TIFF. But there are actually many other image formats available, including GIF, ICNS, BMP, Microsoft Icon, Photoshop PSD, SGI, and TGA, you just have to hold down the Option key while clicking on "Format" to access them.
