Enable Field Test Mode on the iPhone to see the true signal strength of your cellular connection, switching from the bar chart to numbers. To see it all the time you just have to force quit out of the Field Test app as shown in the video, and you can tap the signal numbers to get the normal bars back.

Anything above -80 is good, anything less than -100 is bad. For example, -60 would be a great signal, but -108 would be a weak signal and losing reception.
