Well it's simple, it's because of the gliding.
For some reason, gliding even once disables their ability to be pulled off a wall.
You can notice here how they detach from surfaces.
Not gliding even once will forcefully push them off walls, as intended.
Gliding even once seems to bust that, and instead they'll just be allowed to go vertically with nothing stopping them.
An oversight on Sonic Team's part? Maybe.
Might be a bit obscure/not clear.
