For all of Sonic Forces' faults, the last third of the game gets drastically better. Iron Fortress aside, all of the levels from here on out are at least solid.

Guardian Rock in particular is actually pretty good. It's one of the few levels with some real length to it, and it has an interesting gimmick in the form of the mother of all Crabmeats, the Death Crab. You'll have to dodge its stomping legs throughout the level, and eventually defeat it in a quick step and QTE sequence. Unfortunately, the awful air physics can get in the way of what is otherwise decent level design. Platformers live and die on your ability to adjust your speed mid-jump, something Forces' air physics keep you from doing easily.

To get the Number Rings here, you'll need to come back to this level with the Hover Wispon. You normally get it after beating Infinite in Stage 27, but if you've been going for the optional content, you can also get one by beating Secret Stage 6 or Extra Stage 6. I also despise Red Ring 4 with a passion, because you have to make a near perfect jump over a bottomless pit to get it.
