Personally, when it comes to Eggman fights, my personal favorite is the Egg Viper from "Sonic Adventure". Sure, it's one of the less dynamic fights in the series, but the boss' solid design coupled with the epic, yet foreboding music and the bottomless pit below has always stuck out in my mind since it never fails to put me on edge (in a good way)
Though whenever the conversation of what's the best final boss in the "Sonic" series comes up, one of the top contenders is the Death Egg Robot from "Sonic 2" and for very good reasons. For one thing, this boss has a great setup: after defeating Mecha Sonic, you're feeling pretty good about yourself as you chase Eggman down, only for him to turn the tables by jumping into the largest robot he ever created (at the time) which slowly rises from the ground as this epic theme starts playing.
But arguably one of the best parts about this battle is that the developers nailed the idea that you're fighting in Eggman's domain and he's in complete control. Here you are fighting this huge robot in a cramped arena as this slower-paced, imposing song plays that brings to mind images of a mechanical titan slowly, but surely marching over to crush you like the bug that you are, which is exactly what's happening in the fight. And to make matters worse, you have no rings, so if you take any damage whatsoever, you're dying.
