Portait of Ruin: my favorite of the DS Castlevanias and probably my favorite overall

Symphony of the Night: Far from the best in the series, but still excellent

Curse of Darkness: The most underrated game in the franchise, the ID system is extremely fun and the story is top notch, it probably has the best voice acting the series as well.

Super Castlevania 4: My personal favorite of the classic 2D platfromer Castlevanias, every SNES owner should have this game!

Lords of Shadow: This game and the sequels are very solid games with a story arguably better than the main series. All that said I am happy Konami stated they are going back to the main time if they make another Castlevania game (given their current track record though...)

Harmony of Dissonance: The spell system is really cool and has my favorite main theme in the series, however the dual castles are confusing to traverse and most of the bosses are laughably easy.

Circle of the Moon: Really good, the main thing that takes it down a notch is the UNFORGIVING DIFFICULTY

Judgement: A flawed gem. the music is flawless, the fighting is simple and fun, some of the voice acting is great, and the story as a whole is memorable and campy in a good way, however the voice acting that isn't good is hilariously bad and most of the character designs are questionable at best. That said this is actually an great game and a competent fighter, its just lower here since it can't compare to most other Castlevania games.

Legends: The gameplay is dull, and when it isn't dull its frustrating.

Casltevania 64: Nowhere near as bad as people says it is (and by people I mean AVGN fans), but still meh. If you want a good Castlevania game on the 64, go play Legacy of Darkness.

Simon's Quest: BLECK! If you have seen Egoraptor's Sequelitis video on this then you know why this game is terrible... then again Egoraptor himself is just as annoying.
