Somehow I managed to recreate my first experience with the help of PCem. For the second glitch DOSBox was enough.
If I wanted to paint the car in VGA mode, the game's graphics became striped (the game didn't stop working like in the video). After restarting, it disappeared. I could fix this by starting the game with the 0 button (or the "Ö" button on Hungarian keyboard) in the graphics selector. In exchange the dashboard became very glitchy.
The first effect is nearly accurate to my original experience, the only difference is that everything was more unreadable.
On PCem I used a Pentium II and Voodoo 3 to achieve the effect for a moment with the ALT+ENTER combination.
You can achieve the second with DOSBox by selecting EGA graphics in the game's menu.
