directions : Buttermilk Herb Biscuits
2 1/2 cups AP Flour
2 1/2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1/2 cup (1 stick) COLD unsalted butter, cut into small pieces
3/4 buttermilk
1 lg egg, lightly beaten
8 fresh basil leaves, cut into thin slivers
1-2 sprigs of dry thyme, rough chop (add any herbs you wish)
2 tbsp cup parmesan cheese, finely grated
1 egg and 1 tbsp milk beaten (topping)
Preheat the oven to 400 degrees.
Whisk together dry ingredients by hand or with a food processor (about 6 pulses) Add the butter and cut in by hand or with a few pulses until mixture is coarse crumbs. Add buttermilk and egg, kneeded or pulse still sticky dough forms. Add herbs and cheese with a few final pulses.
Dump out on a floured surface and flatten to 3/4" thick with a rolling pin. Cut out biscuits with a glass or round cookie cutter. Brush tops with egg mixture. Bake for 10-15 minutes till golden brown.
