"Fried Chicken with Sweet and Sour Sauce"
■Ingredients (serves 2)
・1 chicken thigh (250g)
・2 tablespoons of plain flour
・2 tablespoons of potato starch
・Salad oil (as needed)
☆Chicken sauce with sweet and sour sauce
・1/2 spring onion
・2 tablespoons of sugar
・2 tablespoons of vinegar
・2 tablespoons of soy sauce
・1/2 teaspoon of grated ginger
・1/2 tablespoon of sesame oil
★Seasonings
・1 tablespoon of sake
・1 teaspoon of soy sauce
・1/2 teaspoon of grated garlic
・1/2 teaspoon of grated ginger
・1/2 teaspoon of sesame oil
■Procedure
(1) Finely chop the spring onion.
(2) Mix the ingredients in a bowl (Chicken sauce with sweet and sour sauce).
(3) Wipe off excess water from the chicken and cut it into bite-sized pieces.
(4) Place ★ in a plastic bag.
(5) Add the chicken, rub together well, and leave for about 15 minutes.
(6) Add the flour and potato starch to 4. Let air in, close the top, and shake the bag to coat the chicken completely.
(7) Pour about 3cm of salad oil into a pot and heat to 170°C. Add 5 and fry for about 4 minutes, turning the pieces over.
(8) Remove once and leave for about 3 minutes. Heat the oil in the pot to 180°C, return the chicken to the pot, and fry until the batter is crisp. While hot, pour the yu-lin chicken sauce over it.
