Head over to the following location:
%USERPROFILE%\AppData\Local\Octopath_Traveler2\Saved\Config\WindowsNoEditor
Find [SystemSettings] and add the lines of the setting you wish to change
(if "[SystemSettings]" is missing you can add it to the bottom of the file
To remove Depth of Field:
r.DepthOfFieldQuality=0
To remove Bloom:
r.BloomQuality=0
To remove both Post Processing garbage options:
r.PostProcessAAQuality=0
I had to add the [SystemSettings] line because mine was missing.

There is definitely a lot of features and gameplay mechanics to utilise in this game to justify a solid playthrough, especially if you are a fan of turn based FF style games.
Several classes and subclasses to choose from, plenty of skills to unlock, attack boosting and unique ultimate abilities that unlock even more creative ways to deal damage to your enemies.
It certainly is a challenging game and it has a big learning curve. The day and night system can be somewhat of a drag, but it serves as a way for the game to add more mechanics and ways to play it without drowning the player with options. I personally prefer to do my battles during the night and the exploration of towns during the day.
The video will show you what the game can look like without the absurdly aggressive DOF and bloom effects, even when you turn the post processing options to low (which equals off for Unreal Engine)
I also did appreciate how the game is fully voice acted making it easier to immerse myself in the various stories.
