So after much exploration, I stumpled upon the ability to make zombies lootable while they are alive. Turns out it works relatively well. It's pretty difficult to loot zombies while they are active as they have a high chance of catching you while you do it. (As zombies are attracted to the sound of opening inventories).
But it's a nice little addition I felt the game really benefits from and rewards stealth greatly.
