Here is a lovely little video clip from when I hooked up my wife's Arduino Uno to my Moog Wrkstatt. The Arduino was running a patch that was sensing proximity through a ultrasonic range sensor. I was able to use my hand to control this. The Arduino was was patched into t he Werkstatt's low pass filter cutoff frequency, which allowed for some huge skips in frequency with slight adjustments with the hand position. By turning up the frequency, resonance, and putting the LFO through for added slipperiness, the result was the production of formants, voice-like effects achieved through synthesis using a tri-polar filter.
