I am using Vertex colors for my models so I thought it would be cool if we could change the colors at run time. Here I am doing it through the inspector but the concept is there. I map all the major colors of a model and group all the vertices together in lists and then you have easy access to choose a new color and change them on the fly. I can see this being used for factions, modding, or in game customization.
