Recipe & steps
200g cream cheese
340g icing sugar
500g milk chocolate
1 tsp vanilla extract
Toppings of your choice – nuts, coconut, cocoa powder etc.

First up melt the chocolate you are using either in a microwave in 20 second blasts stirring in between, or over a bowl of simmering water, leave to one side. Grab yourself a large mixing bowl and beat the cream cheese with a wooden spoon.

This will help to make it nice and smooth. Slowly sieve in the icing sugar as you go, be careful not to add it all at once as it will go everywhere! Just do it gradually until well mixed in with the cream cheese. Stir in the melted chocolate from before and the extract you are using until a consistent mixture is achieved.

Refrigerate for 45 minutes at least, but you can speed it up in the freezer. Shape with your hands into a small egg shape, or just ball shapes if you prefer (they are quite rich so keep them small!)…. Then roll in your choice of topping.
