There's a simple trick to beating this fight easily. Just make sure you do a flurry of 5 knife slashes each time. If you do 4, then dodge, it uses more full body movement energy, and drains your stamina. Doing 5-slash flurries will instead drain Carlos' (Jessie's) stamina, leaving him open for repeat flurries.
