These fights aren't particularly difficult even on hard mode. Some of the enemy attacks do a lot of damage but if you spread out your party you should be able to grind down his HP before he can wipe you out in return. One trick that helps is to hit the vulnerable squares from the sides instead of from in front so the boss can't counterattack with his big physical AOE wave.
