Chiba Tofu

Chiba Tofu is firmer than normal traditional tofu, which makes it very versatile in cooking. You can fry, stir-fry, boiled, steamed, grilled without it breaking up too much. My recipe today is actually using a normal traditional tofu.

Ingredients (6pax):
1 packet traditional Tofu (4-6 pcs), sliced thinly
6-7 cloves Garlic chopped finely
4-5 Chili chopped finely
2 pcs Fishcakes sliced thinly
5-6 pcs Shiitake Mushroom sliced thinly
1 bowl of Spring Onions (Scallions) chopped finely, I used the dark green part for cooking and the white part for garnish
Optional: Meat (I used 1 pc Chicken breast meat)

Sauce:
1 tablespoon Sambal (Chili Paste)
2 tablespoon Light Soy Sauce
2 tablespoon Oyster Sauce
Half tablespoon Dark Soy Sauce
A pinch of MSG

Steps:
1. Heat oil in wok, throw in Garlic, Fishcake, Mushrooms, Chili, Spring Onions and stir-fry until fragrant
2. Throw in Chicken and stir-fry until Chicken is 70% cooked
3. Put in 1 tablespoon of Sambal, continue stir-fry
4. Throw in Tofu, stir-fry gently for about 1 minute
5. Pour in the Sauces, continue stir-fry mixing up the ingredients
6. Pour a cup of water, bring it to boil and let it simmer for about 10-15minutes
7. Garnish with white part of the Spring Onion
8. Ready to serve.
