There are a total of 9 Legendary Armaments (Weapons) in Elden Ring. The legendary status means it is the most powerful, and it has a gold border to tell you it's legendary. Collecting all 9 Legendary Armaments will reward you with the "Legendary Armaments" trophy / achievement.
Legendary Armaments are more unique than standard weapons, usually looking very unique and having unique skills and weapon arts tied to them.
One of the Legendary Armaments is MISSABLE! Bolt of Gransax can be found in Leyndell, Royal Capital, but after you defeat Maliketh in Crumbling Farum Azula, Leyndell turns into a City of Ash and you can no longer collect this weapon.
For the boss in Redmane Castle, it will only trigger if you A) Come to Redmane Castle too early so that the Festival hasn't start or B) Defeat Radahn to end the Festival and then return to Redmane Castle to fight the Crucible Knight boss.
One of the Legendary Armaments requires you to complete the questline for Ranni. you will be able to get the Dark Moon Greatsword at the end of her quest. A link to Ranni's quest can be found below.
For Devourer's Scepter, you can complete his quest but it will take you a long time to complete. It is much easier just to defeat the knight and get the weapon that way. You can do this in New Game+ as he is right at the start of the game if you miss him as eventually he will move to the Volcano Manor, and then you will have to complete the quest if you want the weapon.
