I fight the Deathbirds in Liurnia, Limgrave and Weeping Peninsula, the Night Cavalry in Weeping Penninsula and Limgrave. Leonine Misbegotten, Godrick the Grafted, some Erdtree Avatars and some small time wannabes. I use the Dual Fingers, 2 x Greatswords with Hoarah Louxs Earthshaker and Lions Claw and dual Rotten Great Axes with Prelates Charge and Fire of the Redmanes.
