Grandma's Cookbook- Fresh Apple Butter Cake
Recipe as written
1 c. butter
2 c. sugar
2 eggs
3 c. sifted flower
2 t. vanilla
2 c. chopped walnuts
1 1/2 t. soda (baking)
1/2 t. salt
1 t. cinnamon
1/8 t. nutmeg
3 c. chopped apples
In a bowl, beat butter + sugar until well combined. Add the eggs, one at a time, beating well after each addition. Gradually throw in the sifted flour, soda, salt, cinnamon and nutmeg. Stir in vanilla. Fold in chopped apples and walnuts. Pour into a greased and floured tube pan. Bake in a moderately slow oven until done. Remove to rack, let stand 15 min. Turn onto plate
Sherry glaze:
In a saucepan, stir in 1/2 cups sugar and 1/2 c sherry. Cook stirring constantly until syurpy (about 2 min)
