IMPORTANT UPDATE! You cannot SLI cards with different VRAM anymore- Nvidia disabled the driver hack.
I don't recommend going higher than 2 way SLI. 3 way and 4 way SLI microstuttering will give you headaches, and there's only a 25% chance you'll see any scaling benefit.
Setting up graphics cards in SLI or Crossfire is quick and easy, and you'll see an improvement across all games,
