Tom Collins:
2oz Gin
1oz Lemon Juice
1oz Simple Syrup (1:1 ratio water and sugar dissolved)
Shake with ice until chilled
Top with Club Soda
Strain into a Collins glass (or cocktail glass) filled with fresh ice
Garnish Lemon Wheel or Peel
