Unpaused at 2:01
You can see that the hostile enemy had done nothing in those 40ish seconds. Because it was paused. It works like a charm.

SHORT VERSION
Add your souls game and the PS5 Remote Play app (which you should already have) in the same folder. Alternatively, you can use the free downloadable app 'Media Player' instead. Select the non-game app to pause the game.

LONG VERSION

My previous video (slower method)

As we saw on my previous video, Rest Mode is not the only way you can "suspend (aka pause) the application". One other way is to select the Trim option on a video in your Capture Gallery. And another way, shown in this video here, is to open up a non-game app. Selecting another game app would close the one you're currently playing, but selecting a non-game app (such as Netflix or Media Player) would merely suspend the one you're currently playing.

Media Player and PS5 Remote Play are the best candidates for this. Media Player can be downloaded for free, it only holds 657.3MB in size, and unlike other non-game apps like Netflix, it can be placed in a folder, and accessed from the XMB directly without having to go to the Library section. Same rules apply to PS5 Remote Play, except that that should already be on your PS4, as I think it came with a patch, and it can't be deleted.

If you've selected the non-game app before starting your souls game, they should be side by side on the XMB (I think it's always in the left-to-right order of "What's New?", followed by latest selected app, followed by second-to-last selected app). Alternatively, you can place them together in a folder, which guarantees they're together. I've heard one report about folders being glitchy, but it has never happened to me.

When it's time to pause, simply select the relevant non-game app and your souls game will pause immediately. In some versions, you may have to press X a second time after selecting the app/feature to confirm you want to proceed and suspend the souls game application, but it still works, even if it takes a second longer.

The game will stay unpaused; It won't resume unless you manually open it again, so you can take your time to do anything you want in the XMB before that.
If you see the game's wallpaper cover for a split second after you open it, that shows that it was paused.

While this method (when using Media Player) is both faster and more convenient than the Trim method, it requires a PSN account to download the Media Player app (though offline non-PSN users on the PS4 can use it as well), whereas the Trim method can be done without having to download anything from the PS Store.
