Here is the best method to quit and close a game on your Xbox Series X|S:
Open the Xbox Guide: While you are in the game you want to close, press the Xbox button on your controller. This will open the guide menu on the left side of your screen.
Highlight the game: The game you are currently playing will be highlighted on the main screen of the guide.
Open the menu: Press the Menu button on your controller (the button with three horizontal lines, to the right of the Xbox button).
Select "Quit": A small menu will pop up with a few options. Select Quit to force the application to close completely.
