One of my favorites, here is a ICE SORCERER / WIZARD dealing cold damage Build Guide in Baldur's Gate 3. This is pretty much a pure caster, so we can dish out a ton of damage with this, as well as have utility with things like globe of invulnerability, and elementals. The Wizard adds a lot of nice utility to this build, and it doesn't require us to do much other than take the intelligence circuit or put a few levels into intelligence. I really enjoy this build because of the damage output, but it's also really cool theming because ice sorcerers are definitely underrated. You can use the cold brim hat with this build as well but I opted for the int circlet.
