A Winter Fae called The Headsman challenges me in combat and gets more than he bargained for when I break his quest. The battle is actually meant to be two parts, once you've done a certain amount of damage he'll retreat somewhere and you go after him for round two. Because I did so much damage from the outset I killed him instantly and the second part never triggered, meaning I was able to complete the quest there and then.

I only found this out after reading a wiki once I'd finished the game.
