Black wolfberries, a tea ingredient, contains anthocyanins, as do all plants with dark blue or purple colour. Soaking dried black wolfberries in hot water releases the anthocyanins, which are initially colour the water dark blue. Putting acid in the solution changes the colour to magenta. Neutralizing the acid and making the solution basic will change the colour back to blue.
