Cactus pretty much harvests itself, because it breaks when it grows into a space that has something next to it. However, there's a chance that the dropped cactus drops back onto the cactus below and is destroyed, or drops sideways into neighbouring cactus. Stacking upwards somewhat reduces the probably of falling sideways into other cactus. Using iron bars or glass panes minimises the hit box of nearby blocks, minimising the chance the cactus bounces back towards itself.
