Giant Medics are well known for having a lot of HP (4500), and healing extremely quickly to the point that their patient is basically unkillable.
They aren't really suited to low difficulty missions but advanced and expert they are fair game.
There are Giant Medics with quickfix ubercharge and there are giant medics that replace that with health regen, the latter being easier to deal with.
Spies are a strong counter to giant medics so overreliance on them can be quite easily punished with the addition of just 1 semi competent spy with the right upgrades.
And whatever you do. DO NOT PUT THEM AS A POCKET FOR GIANT SCOUTS. Either they fail to latch on to the target or they do giving the Scout an extra 4500 effective health.
