First, there is a point after the boss is dead that he gets hit, but there isn't much you can do when it shows the killing blow, plus the boss is dead before getting hit, so I don't think it counts against it too much.

Some bosses can be done way quicker, this is a first playthrough though, so I don't know I can slide past the first boss, blah.

Favorite boss for me besides one specific move would be the giant face. While the rotating fire is obnoxious and it seems most bosses have a bs move that ruins no hit attempts, the mechanic with the ball spell she throws is pretty cool. If you do it right, you'll mess her up and most other bosses are honestly pretty bland in comparison. Has something unique about her, rest are just dodge and hit really.

Boss I hated was Emposito. The boss just does a lot of weird garbage to contend with. The baby part never really hit, it's really easy to dodge it. But without knowing, the boss can clear a good portion of the screen and if you're in the center when she spins later on, you're getting hit, she covers the entire ground for like a good solid 5 seconds, so rinse repeat. She also had a nasty tendency to readjust to what you are doing, which sounds cool, but she can move into impossible to reach locations. She literally stuck herself in the upper right corner and there wasn't anything I could do. With how her patterns and such are, I'd say easily the hardest boss in the game.

Not much I really want to say about the game. Combat can come of a bit bland. It's nice when parrying can be used, but you can usually just slam people to death as they get stunlocked forever. Without the No hit rule, bosses tend to be on the easier side. Hardest thing is probably just getting knocked into instant death really, or taking unnecessary damage due to the camera not wanting you to see anything important. Comes off fairly cheesy in the deaths, but beyond going back, the penalty for death isn't that painful, even if you never recover you bar, since abilities you can use at best are really only useful to hit the babies to free them or for making your basic attacks more efficient.
