In order for the Shaymin request (A Token of Gratitude) to appear, you need to beat the game and also have save data from Sword and/or Shield on your Switch. Once you have those, the request will be available on the board. Shaymin itself is a bit skittish and will run around and likely away - especially in battle. I highly recommend having a save set before you start trying to catch it, since even though you can leave the Fieldlands and come back to respawn it, reloading the save is a bit faster.
