This video is just backtracking to previous areas with the Rotom Bike upgrade, which allows us to cross water. Some of which contain very strong Pokémon, as well as some useful TMs and other stuff.

Since this is just a backtracking video, I show off each area, first up is Route 2, by Professor Magnolia's house is a lake that is filled with Arrokuda and Barraskewda, you can find some useful items, including a Choice Band, a TM for Psycho Cut, and a Prism Scale. There is a new encounter that is only obtained through fishing, and that is Feebas. This is a 1% encounter, so I wouldn't waste your time finding it, even though it does evolve into Milotic when traded while holding a Prism Scale, and that Milotic is a defensive Water-type with good Special Attack, it's not that Milotic is a bad choice, it's just that Feebas is a pain to get, so I wouldn't go out of your way to get one.
There are some special overworld encounters in these places, on Route 2, there is an Obstagoon, which you can capture as you will need one for an in-game trade, in Turrfield is a TM for Solar Beam and a wild Crawdaunt, and in Galar Mine No. 2 there is a TM for Mud Shot and a wild Gastrodon.
Then it is back to the Wild Area, and when you score 20000 points in the Rotom Rally, you can get a TM for Volt Switch, a very handy move to have. There is also the Breeder which you can battle, it took me a while to find her, but here she is with the middle-staged starters, so she has Raboot, Drizzile, and Thwackey. I believe you have to complete the main story in order for her to have the fully evolved starters.
There is one area that we explore, and that is known as Lake of Outrage, not to be confused with Lake of Rage from Johto, but this place is inhabited by evolved Pokémon, like Klinklang, Bisharp, Vanilluxe, Golurk, Orbeetle, Golisopod, Beheeyem, Claydol, Reuniclus, Gothitelle, Noivern, Gardevoir, Hatterene, and many others.
There are some new encounters that you can get there, some version exclusive Dragon-types, as well as Pseudo-Legendary Pokémon. In Sword, you can get Turtonator, Jangmo-o, and Deino, while in Shield, you can find Drampa, Larvitar, and Goomy, but there is a new Pseudo-Legendary Pokémon introduced in this game, and that is Dreepy, it is a very weak Ghost/Dragon-type that becomes a very powerful mixed sweeper when fully evolved, and has high Speed. Dreepy is a 1% encounter, and it isn't until Level 60 that it will be fully evolved, you can also encounter its evolved form Drakloak as a 1% encounter, so it will take a lot of patience, but if you do get really lucky, it is a strong Pokémon. I wouldn't say it's recommend for single player, Dreepy's final form is really good in competitive battling, and it has a very wide movepool, being able to learn moves like Phantom Force, U-turn, Draco Meteor, Flamethrower, Thunderbolt, Surf, Shadow Ball, Psychic Fangs, and many other moves.
Ditto is also accessible in Lake of Outrage, and all it is good for is breeding and Pokédex filler.
Rotom is another Pokémon you can find there, and it will have Discharge right away and can be taught Shadow Ball through TR. I won't go too far with Rotom, but you can get its many different forms, but I will wait till that point in the game to go over it.
There was one Pokémon that I never went over and was accessible back in Hammerlocke Hills, and that is Honedge. It evolves into Doublade, and to evolve it into Aegislash, you will need to use a Dusk Stone. Aegislash got a 10 point nerf in its stats, so what used to be 150 in its stats is now 140, and King's Shield instead lowers Attack by one stage, but Aegislash is still a good Pokémon. You can encounter Doublade at Lake of Outrage, so it will make a good Pokémon to add to your team if you can find one.
Another thing to note is that you can encounter an evolution of Eevee depending on the weather, so it is snowing, you can find Glaceon, I will list each weather the Eeveelution show up in.

Snowing & Snowstorm: Glaceon
Sandstorm: Umbreon
Intense Sun: Flareon
Fog: Sylveon

These Pokémon are at a high level and can be tricky to catch, but here is your easier way to get an Eeveelution, and you can breed it with a Ditto if you can find one, so that way you can breed for an Eevee and evolve them so you can get every Eeveelution in the game.
There are some Gigantamax Pokémon that I have not gone over yet, some of which I won't spoil because in the Champion Cup, we will be going up against some Gigantamax Pokémon, so the ones you won't battle in the main story include Orbeetle, Sandaconda, Kingler, and Snorlax, and there is data on Toxtricity and Melmetal having Gigantamax forms.
