There is one area in the North Province to check out, and that is Casseroya Lake, and that is where the False Dragon Titan can be found. I don't explore the entire lake yet, mostly the area that connects West Province Area Three with Casseroya Lake, and there are some high levelled Pokémon that can be found in the area.

Casseroya Lake is very large, and there are some small islands around the lake, and there are some people that you can talk to. One of them allows you to make Sushi Sandwiches, which could reference the wild Tatsugiri that can be found around the lake, and there are a bunch of Trainers at Casseroya Lake.
One of the Trainers is the Boss Trainer who talks about an unusual item at the ice cream vendor at Medali, and this Trainer is really tough, his team is Gengar, Barraskewda, and Braviary. For other Trainers, there is yet another Arboliva Trainer, which should have been the Dolliv Trainer that you would fight earlier, and there is a Trainer who is a fan of Iono, and he uses a Mismagius, which is her signature Pokémon and the one she Terastallizes in the Gym Battle with her.
There are a bunch of new Pokémon, and there are two Pokémon I want to go over specifically, those two are Dondozo and Tatsugiri. Starting with Tatsugiri, it is a Water/Dragon-type sushi-like Pokémon, and there are three different forms of Tatsugiri. Its Ability is Commander, if it is allied with a Dondozo in a Double Battle, it will enter Dondozo's mouth and be unable to be targeted in battle, and all of Dondozo's stats are boosted by 2 stages, but Dondozo cannot be switched out, and this also affects Dondozo's signature move Order Up, which boosts one of Dondozo's stats based on the form of Tatsugiri. The Curly Form is the orange Tatsugiri, and this boosts Dondozo's Attack when Order Up is used, the Droopy Form is the pink Tatsugiri, and this one boosts Dondozo's Defense, and the yellow one is the Stretchy Tatsugiri, and this boosts Dondozo's Speed. As for Tatsugiri itself, Special Attack is its best stat, and it has decent Special Defense and Speed, but its movepool is quite limited, at least it gets Surf and Dragon Pulse, and it has access to Nasty Plot, unless you want to teach it Tera Blast and give it like a Steel Tera Type to counter Fairy-type Pokémon, it's not a bad choice, but there are better options.
As for Dondozo, this Pokémon has a massive HP stat, its signature move Order Up is a 90 Power Physical Dragon-type move which boosts one of Dondozo's stats based on the form of Tatsugiri in a Double Battle. Dondozo has very good Attack and Defense, and it does come with Aqua Tail when caught and it learns Wave Crash at Level 65, which pairs well with Dondozo's massive HP stat, and it can learn a good amount of Physical moves, like Earthquake, Body Press, Heavy Slam, Rock Slide, Avalanche, and many other moves, it's a very solid Water-type if you are looking for one to add to your team. Dondozo is even the largest Generation 9 Pokémon, and the largest Pokémon available in the game, this thing is like 40 feet tall, and if you are wondering, Wailord is not in this game, I liked how large Wailord was in Pokémon Colosseum, and then in games like X & Y, they resize Wailord to make it look smaller, it's a good thing they didn't resize Dondozo much like what they did with Wailord.
For other encounters, you can find Staraptor, Tropius, Slowbro, Sliggoo, Toxicroak, Azumarill, and many other Pokémon, and for version exclusives, Skuntank is in Scarlet, while you can find Swalot, Drakloak, and Mismagius in Violet. I won't explore the full lake area yet, which is where the False Dragon Titan is found, and for beating five Trainers at Casseroya Lake, you can get the TM for Hydro Pump, while it is powerful, it has less accuracy than Surf, and there are some non-Water-type Pokémon that can learn that move, including Salamence and Hydreigon, which can use that move for type coverage.
