It's not as easy as it looks because the dragon tends to glitch out. Expect to redo this part of the game for many times.

But if the dragon works fine, then it should be easy enough. Just wait until the dragon spewed fire, then hop from any one of the platforms (you might want to choose something closer) and stab it.

You just need to stab it 3 to 4 times to get the egg.
