In order to get the stat related achievements in the game, you must level up a single stat to 9 (highest rank). Since you can only get to level 10 in the game, this would mean that you must play through 4 times and ONLY focus on a singular stat each time. You can skip doing this by using console commands, saving you a TON of time!

Start a new game and speed through the intro. Once in possession of the MC, pause the game and choose Settings. In the Settings Menu, enable the Dev Console option, and then exit the Pause Menu.

In-game, press the F12 button on your keyboard. This will bring up the Console Commands. Now, type in LevelUp followed by 2 and hit enter. This will make you level 2, and the stat upgrade screen will pop up. Now just choose one of the four stats that you want the achievement for, and just keep repeating this. The only exception is changing the number for the level each time. So basically first time use LevelUp 2, the next time use LevelUp 3, then LevelUp 4, etc. LevelUp IS case sensitive, so make sure to capitalize the first L and the U.

Once you have the achievement, close the Console Command menu and start a New Game. Rinse and repeat, and you should have all 4 achievements in about 10 minutes instead of having to play through long enough 4 times to hit max level while only focusing on one stat each time!
