Sonic Mania Plus: Encore Mode Part 6: Stardust Speedway Zone (Team Super)
Act 2's recoloration is classy, because its new colors in Encore Mode are based on Bad Future colors of the original Stardust Speedway in Sonic CD.
I was mostly hunting for big Special Stage rings, again. In Act 1, there's one to reach from a left slope, but this slope goes all the way off the top of the screen. The only way I could go over this is to spindash upwards over it as a Super character. Or you can go to the opposite side of where this big Ring is by flying to it with Tails and maybe Ray, or climbing a wall towards it as Knuckles.
Act 2 has one in a dense high-speed tube maze near the bottom of the zone, and another one new the top that can be reached with a rocket. I wasn't able to go back to get that one.

One big thing the "Plus" patch of this game changed is the way Metal Sonic is fought. The first section where you're "racing" him is the same, but the second section where you have to fight those little 8-Bit Silver Sonics is now easier. You can not only now hit them right towards Metal Sonic while they're in ball form, but you can also just destroy them and let their projectiles fly towards Metal Sonic. These do less damage, but they'll get the job done soon enough if you're only relying on them.
I lost Mighty and Tails from this fight after running out of Rings from being Super, but I'll make up for this in the next video by getting both of them back easily. At least this loss didn't make me have to start the entire boss battle over again. That's definitely a... Plus! Remember that losing all 5 characters is an instant Game Over.
The third section where you "race" Metal Sonic again is much shorter, AND it comes with a Star Post. For the forth and final section, instead of having to outrun a gigantic spiked wall while hitting Metal Sonic, instead, Eggman comes in and lets Metal Sonic us the Phantom Ruby, transforming him into his gigantic monstrous form from Knuckles Chaotix!
Fighting this form of Metal Sonic is like fighting the Great Eggman Robo in Sonic 3 & Knuckles' Death Egg Zone. Dodge his attacks, and his claws (just like the Death Egg Robot in Sonic 2), and keep hitting the core where the Phantom Ruby is. You also can't go too far to the left, or you'll fall off.
Defeating this monster eliminates Metal Sonic for good. Too bad you still can't get the Phantom Ruby, though, as an enemy swoops in and knocks it away from you back to Eggman.

In a new zone transition to Hydrocity, the heroes find Eggman working on a brand new giant robot, but then he uses the Phantom Ruby to send them away, again.
