Press "Y" when "1" disappears on the countdown, but before "GO" pops up. You'll get a rocket start.

The skip in the first section was completely on accident. Most of the time, Sonic starts his "WHOAMGDWELIYBRSD" animation before you can boost again, so you want to aim for the spring.

That homing attack trick in the second section works about half the time, and you skip a good couple seconds. The rest of the time, the camera changes like it did here, and it takes as long as it usually would.

You can mash the boost button for the entire miniboss. Assuming you have enough boost before the match, you'll usually get away before he can hit you and gather enough rings to keep your meter up. You don't even have to sidestep.

The part with the boosts on the winding path is probably the hardest part of the game for me. If you get the first boost, though, you can usually get the rest of them.
