I use Pikachu to go through All-Star Mode. In All-Star Mode, you deal more damage to your opponent, and you take less knockback and damage from your opponent's attacks, with stage hazards being the only things left unchanged and you have to watch out for them. As with the increased damage, Pikachu's best moves are its forward smash and Thunder if you can land those attacks, even after getting in as much damage as you can on your opponents.
Going over Pikachu's Alt. Trophies, in the 3DS version, it uses its 8th alternate costume where it wears the hat of the male protagonist from Pokémon X & Y, I do like the detail where the glasses are on the hat, likely referencing character customization in Pokémon X & Y, and in the Wii U version, Pikachu's Alt. Trophy in that game uses its 4th alternate costume where it wears Pichu's goggles from Melee. I remember in Brawl there were people speculation that Pikachu from Brawl evolved from the Pichu from Melee, because Pikachu can wall jump in Brawl, which Pichu was able to do in Melee.
I will go over All-Star Mode and which characters you fight against.
Round 1 (2015-2007): Corrin, Greninja, Lucina, Robin, Dark Pit, Shulk, Bayonetta, Wii Fit Trainer, Rosalina & Luma
Round 2 (2006-2001): Lucario, Lucas, Ike, Zero Suit Samus, Toon Link, Bowser Jr., Roy, Olimar, Villager
Round 3 (1998-1994): Ganondorf, Sheik, Cloud, Jigglypuff, Charizard, Pikachu, Mewtwo, Diddy Kong, Ness
Round 4 (1993-1991): Meta Knight, Falco, Fox, Wario, King Dedede, Kirby, Sonic
Round 5 (1990-1986): Captain Falcon, Yoshi, Dr. Mario, Marth, Mega Man, Ryu, Palutena, Pit
Round 6 (1986-1984): Samus, Zelda, Link, Bowser, Peach, R.O.B., Duck Hunt Duo
Round 7 (1984-1980): Little Mac, Luigi, Donkey Kong, Mario, Pac-Man, Mr. Game & Watch

Making its debut in 1998-1994, and being from Pokémon Red & Blue, there are four characters from those games, and Pikachu is one of them, Charizard would be the next character on the roster, Jigglypuff isn't until after Lucario, and Mewtwo is a DLC character in this game. The following stages you can fight them on in the 3DS version are Spirit Train, Unova Pokémon League, Magicant, and Midgar, while the in the Wii U version, the stages are Kongo Jungle 64, Bridge of Eldin, Pokémon Stadium 2, Onett, and Midgar.
Then for Pikachu's Final Smash of Volt Tackle, and the Trophy for it, and I do like how easier the Final Smash is to control in this game, because in Brawl, this was a very difficult Final Smash to control, and Pikachu can even self-destruct when the Final Smash wears off at the wrong time.
