"Tofu Cheese Chijimi"

■Ingredients (serves 2)
・1 block of silken tofu (300g)
・1/3 bunch of Chinese chives (30g)
・40g pizza cheese
・3 tablespoons of potato starch
・1 tablespoon of sesame oil
☆Seasonings for the dough
・1/3 teaspoon of chicken stock powder
・1/6 teaspoon of salt
・A little pepper
・Sauce
・1 tablespoon of ponzu soy sauce
・A little chili oil

■Procedure
(1) Put the tofu in a bowl and mix with a whisk until smooth. ☆ Add the potato starch and mix. (No need to drain the tofu.)
(2) Add the Chinese chives while cutting them into 4cm widths with kitchen scissors, then add the pizza cheese and mix quickly (dough).
(3) Heat half the amount of sesame oil (1/2 tablespoon) in a frying pan over medium heat, pour in the batter and smooth it evenly. Cook for 5-6 minutes until golden brown, then flip. Pour the remaining sesame oil around the edge of the frying pan and cook for 5-6 minutes until golden brown and the edges are crispy. (・The batter is soft and crumbles easily, so try not to touch it except when flipping it over. ・The moisture content varies slightly depending on the tofu, so if the batter is too loose to flip properly, start with 1 tablespoon of potato starch and add more.)
(4) Cut into bite-sized pieces with kitchen scissors, place in a bowl, and add sauce.
