The colloidal solution of two immiscible liquids in which one of the liquids acts as a dispersed phase and the other as dispersion medium is called emulsion. Milk is an example of emulsion in which fast globules are dispersed in water. Emulsions resemble lyophobic sols in some properties. Emulsions are prepared by high speed mixer. Emulsion are of two types i.e., O/W and W/O type emulsion, identified by dilution test, conductivity test and dye test.
